– 2 pounds of oxtail, cut into pieces

– 1/2 cup of red wine
– 4 cups of beef broth
– 1 teaspoon of salt
– 1/2 teaspoon of black pepper
– 1/2 teaspoon of dried thyme

– 1 bay leaf
– 1/2 cup of all-purpose flour
– 2 tablespoons of vegetable oil
– 2 tablespoons of tomato paste
– 1 cup of red wine vinegar

Instructions

1. Begin by preheating your oven to 300°F (150°C).

2. In a large pot, heat the vegetable oil over medium heat. Add the oxtail pieces and cook until they are browned on all sides. Remove the oxtail from the pot and set aside.

3. In the same pot, add the chopped onion, carrots, celery, and garlic. Cook until the vegetables are softened and the onions are translucent.

4. Stir in the flour and cook for 1-2 minutes, until the flour is well-coated.

5. Add the red wine and cook until it has reduced by half.

6. Pour in the beef broth, salt, black pepper, thyme, rosemary, and bay leaf. Bring the mixture to a boil, then reduce the heat and simmer for 1 hour.

7. After 1 hour, add the tomato paste, red wine vinegar, and canned tomatoes. Simmer for another 30 minutes.

8. Preheat the oven to 325°F (160°C).

9. In a separate skillet, heat the vegetable oil over medium heat. Add the diced potatoes and carrots, and cook until they are lightly browned. Add the browned oxtail pieces to the skillet and cook for another 5 minutes.

10. Transfer the skillet with the oxtail, potatoes, and carrots to the oven, and bake for 1 hour, or until the oxtail is tender.

11. Remove the oxtail from the oven and set aside. Add the frozen peas to the stew and cook for another 10 minutes.

12. Once the stew is ready, taste and adjust the seasoning if necessary. Serve the oxtail stew hot, garnished with fresh parsley.
